Senomyx was founded in 1998 based on taste research work out of the University of California, San Diego. Utilizing and expanding upon the tools and proprietary taste discovery techniques developed by our scientific founders, we have become a leader in the discovery, development and commercialization of novel flavor ingredients.

Discovery & Development

With an advanced understanding of human taste bud science, precise screening and taste testing, Senomyx has developed a process that replicates taste bud function. This process lets us discover new flavors that intensify the taste of foods and beverages and flavor boosters which allow for the reduction of sugar and other higher-calorie sweeteners.

Taste buds have cells that are specialized to interact with certain ingredients and provide a specific taste sensation, such as sweet, salty, bitter, sour, and umami flavors (also called “savory”). When we eat something with sugar, for example, the sweet taste cells on our tongue interact with the sugar and send a signal that we perceive as a sweet taste.

During our discovery process, we can get a precise measurement of the sweetness signal released when sugar interacts with sweet tastes cells within a taste bud. We then add a sample, from our extensive library of over one million compounds, to determine if it can intensify the sugar’s sweetness signal.

Using this proprietary selection process, we can test thousands of potential new flavor ingredients each day. We then bring in trained taste testers to confirm that new flavors work as expected. Senomyx has used this process to discover unique savory flavors, sweet flavor boosters, cooling sensates that provide properties that are advantageous to menthol, and flavors that reduce unwanted bitterness in products.
